Abstract

The main objective of this study was to investigate the oxidative shelf stability of peanut butter slices when subjected to different kinds of packaging and storage conditions. The specific objectives were: 1. To evaluate the performance of various packaging materials with respect to rancidity of peanut butter slices. 2. To study the effect of temperature and humidity on the storability of peanut butter slices.
